Cheesy Ground Beef and Rice Casserole

This cheesy ground beef and rice casserole is the perfect comfort food. It’s loaded with ground beef, rice, and cheese and is sure to become a family favorite. This casserole is so easy to make and can be prepped ahead of time and baked later for a quick and delicious dinner.

Ingredients:

– 1 lb. ground beef
– 1 onion, diced
– 2 cloves garlic, minced
– 2 cups cooked white or brown rice
– 1 can (14.5 oz) diced tomatoes
– 1 can (8 oz) tomato sauce
– 1 tsp. dried oregano
– 1 tsp. dried basil
– Salt and pepper to taste
– 2 cups shredded cheddar cheese

Instructions:

1. Preheat oven to 350 degrees.
2. In a large skillet over medium-high heat, brown the ground beef, onion and garlic until beef is cooked through. Drain any excess fat.
3. Add the cooked rice, tomatoes, tomato sauce, oregano, basil, salt and pepper to the skillet and stir to combine.
4. Transfer the mixture to a 9×13 inch baking dish.
5. Sprinkle the top with the cheddar cheese.
6. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
7. Serve hot.
